I'm getting the hang of optimize but not cutting. Whenever I try to cut I drift too much then crash into the wall

At the end of the cut drift you have to drift the opposite way to pull your kart straight again while getting the boost at the same time.

My Optimizing is going well ;D I can almost always use it and I know when not to :O
Or else you'll hit the wall on those circular turns in Zoomtown T_T

When you cut drift do you countersteer right away?

Pretty much right away. Depending on how much n2o you need is how much angle you need to get before you counterdrift.

Yeah, It's most effective on straightaways and downhill. (you get more nos and don't lose as much speed). The main tracks you need it on are zigzag and ztown. Also if you don't do 2.9 on the ez tracks (team).

I found cutting drift to be the easiest to learn out of all the advanced drifts. Actually, on second thought, it might even be easier than consistantly optimizing your drift. However, i havn't completely mastered it on complete straightaways yet (like zoomtown), but I have it down pretty well on ~20degree turns like the 2nd small turn on zig (the one at the bottom of the first small hill on the track).

As for double boost, I think i finally know how to do it; I just need to practice now. The main part im trying to get is the timing on when you press your 2nd shift. If you press it too early, your drift kind of drags on, but if you press it too late, your first drift has already ended.

yeah I find the straight ways hard, I always try it when I am playing those boring maps, (ARC ENEMIES EWWWW). xD
Still can't do it for advantage =[
