But something weird is going on, whenever I hit an item box I don't get an item, not all the time but it's happening alot more now. :/

Hi. Itemer. Anyway, if you don't get a box it's because someone is right behind you and somehow got the box (it happens) or you are lagging.

Hello there Bebileala, Welcome to Kart Extreme.

The item problem is probably you are lagging. It happens when you think you are ahead but actully you are behind someone and he gets the Item Box before you can. This happens to laggers sometime.
